Summary

Each week will feature a main food category that has been shown in studies to promote health. The class with start with introductions and sharing of the previous week, a 20 min talk, a 30 min cooking demo with tasting and then a wrap up. Each week participants will get a full day’s menu, related handuts, and recipes.

Here are the topics and cooking demos for the session:

Week 1:  Intro to Plant Based Nutrition, Great Grains. Food demo: Anybean, Anygreen, Anygrain with a Lemon Cashew Tahini Sauce

Week 2:  Plant Based Protein, Scrumptious Soy, Fabulous Fiber, Beneficial Beans. Food demo: tofu scramble with red and orange peppers

Week 3:  Lucious Leafy Greens, nutrient density. Food demo: making a burrito out of blanched collard green leaves

Week 4:  Magic Mushrooms & Alluring Allium. Food demo: multi mega mushroom stir-fry, reishi tea

Week 5:  Anti- Cancer Cruciferous Cabbage and friends. Food demo: cauliflower Mac n cheese

Week 6:  A Rainbow of Fruits. Healthy Whole Fats. Food demo: Tabouleh with Navy beans
